I came home last night and decided to bake, only if we had all the ingredients in the house. Luckily, we had everything needed for this yummy chocolate cake 🙂
So, next time you are making a treat for your family, consider this healthier alternative!
I typically make this a two layer cake, so that is the recipe I’m going to provide.
INGREDIENTS
2 cups of Quinoa Flour/or Brown Rice Flour
3/4 cup of raw cacao powder or unsweetened cocoa
1 tsp baking powder
1 tsp baking soda (aluminum free)
1/2 tsp salt
1 cup of applesauce
1Â cup coconut palm sugar
3/4 cup honey
2 tsp vanilla
2 large eggs or egg replacer of your choice
1 1/3 cup of oat or almond milk
1/2 cup of mixed berries, frozen or fresh
Icing – I have no measurements for this. I just mix it to taste 🙂

Directions:
Preheat oven to 350F. Grease and lightly flour two 9″x1-1/2″ round cake pans. In a medium bowl, combine flour, cocal, aking power, baking soda and salt;set aside. In a large bowl, cream butter(or applesauce) and agave on medium high speed until light and fluffy, about 4 minutes. Reduce speed to low and add vanilla and eggs one at a time, scraping bowl after each addition. Alternately add flour mixture and milk ( starting and ending with the flour mixture) while mixing on low speed. Continue to mix until smooth. Bake for 30-35 mins or until a cake tester inserted in the center comes out clean.
